As Manager Bars I was the head of my department, and therefore tasked with the full accountability for two cocktail bars (legendary Freddy’s Bar and newly created speakeasy bar Chapter 1896) and an outdoor terrace at the iconic five star hotel De L’Europe. During these years at one of the original cocktail catering companies in The Netherlands, I made cocktails on location throughout the entire country for a vast variety of events ranging from small and intimate to massive and extravagant, including company parties, weddings, birthdays, award shows, movie screenings and the unveiling of the (at the time) new Volkswagen model.

In this position I co-managed the superb Tailor Bar. Besides managing staff performance and quality of guest service, I was also responsible for the registration of hours, monthly inventory, writing daily reports, hiring staff and maintaining relationships with distributors. During this tenure I played a large role in the creation of a seasonal menu concept and a substantial amount of its cocktails.

My first dive into the five star hotel business. Here is where I truly started developing guest service to the next level. As a bartender at The Tailor I contributed my first menu cocktail ever, a personal milestone. I also trained new employees, both on the floor and behind the bar.
