Whether in fine dining, fast casual, or even consulting with QSR properties, helping restaurants find solutions and stay open during the Covid 19 challenges, was testament to the perseverance and ability to find multiple ways to pivot and evolve through multiple hurdles. Maintaining composure, while increasing or maintaining sales, then keeping COGS and Labor in line for prime costs during those tumultuous times shows the patience and steady guidance of my personality.One other challenge in the last eighteen months is the staffing shortages and retentions. Sourcing has been a focus, along with interview techniques of asking the correct questions, and then listening to what is really being said. The key, is retention of the current qualified teams to mitigate turnover, while infusing the new hires that have a positive attitude, with the sense they can contribute and are part of the success.
