In terms of health, EVERYTHING!As “cold pressed” olive oil still uses heat, I created a rare cutting-edge technique over commercially extracted cold pressed olive oil. Pressed 30x colder in small batches, this ice intensive pressing process, maintains everything alive about the olive. We believe that not only is an olive the perfect fruit, but also the perfect fat. With ice pressing we found a way to preserve both! When our Pappou (Grandpa) planted our first trees a century ago, words like, regenerative, organic, and Non GMO didn’t exist...he just called it farming. We didn’t see a reason to change.
