FarmerBlack Bear Sugarworks - Barn Owl Maple Mar 2005 - Sep 2018Owned by Mark and Cameron Hastings. We operated a moderate sized maple sugar farm on 250 acres in Southern Vermont. We introduced Digital Frequency Drives that covert single phase electricity to 3 phase electricity to the sugaring industry. Dramatically improving horsepower and efficiency for vacuum pumps and all the other types of pumps we used.A carbon negative business we captured 8,775 metric tons more carbon than we produced during the time we owned this forest.We sold maple syrup to haute cuisine restaurants and fine food distributors in the New York Metro area.I loved making something so deliciously nutritious directly from the earth.

We aggregate crops and products from small and medium sized family farms for the New York market.Our store front served the finest in all natural frankfurters from Black Watch Farms of Weathersfield, VT and maple soft serve ice cream from Kingdom Creamery in East Hardwick VT, Original Old Fashioned Maple Cream Sodas, our ultra premium organic maple syrup, maple candy and select crops & products from the Vermont farming and small producer community. We opened our Park Slope store in Oct 2014 and closed in July 2017.

Our flagship product Confidential Courier was used by fortune 500 companies in worldwide applications, protecting all manner of data from clinical trials and oil exploration to stock picking newsletters.A typical application was a massive collection of highly sensitive data being distributed to geographically and socially or organizationally disparate audiences. Through the use of time we were able to control not before/not after viewing of data. Other criteria was used to manage access to all or part of the protected data collection through our patented key management system.We signed our encryption algorithm license with RSA when Jim Bidzos and Burt Kaliski came to the meetings and were the first to be granted an export and corresponding import licenses to use 128 bit RSA algorithms in France. Our ideas were subject to approval by the NSA and initially had to register with the Dept of State.

Using the Escoffier method of cooking, I ran a turn of the century kitchen building all menu items from whole food. During this time, I learned how to break down and butcher whole animals at a local meat locker, something that now comes in very handy at my farm.We combined classical French, Asian and American cooking techniques and flavors with locally procured food in our California Cuisine menu. We were an early version of what are now commonly called fusion and farm fresh restaurants. I made a huge step forward in understanding the fundamentals of cooking. There is no replacement for making something hundreds of times. It provided a foundation for cooking from scratch and how to innovate and interpret recipes that I use to this day.
