I operated a seven person kitchen crew at a finedining marina restaurant. Specializing in Seafood and steak with an énfasis on local ingredients and traditional Chesapeake Bay cuisine.

I Started at Carvers when I was 14 washing dishes then quickly moved to the line working the flat top and making salads. I soon moved my way up to a lead line position then Sous Chef. Running a crew of up to 7 line cooks and 4 prep cooks at a time and managing up to 18 boh crew. I became comfortable working in a fast paced brew pub as a leader. For many years I worked breakfast through dinner ensuring all aspects of prep, line duties and specials were up to the business for the day. We served up to 300 plates a shift so it was very high paced. I would translate instructions and requests in Spanish since many of my cooks spoke no English. I worked here on and off for most of my life leaving only to travel and go to college and am welcome back to this day.

Operating a gastro pub style kitchen with three to five employees really opened my creativity and flexability. Pairing craft beers with eclectic pub cuisine was very rewarding.

Assisted Executive Chef. Specializing in Seafood and Steak. Working with a gifted French chef not only gave me discipline but an acute attention to detail. Prep and line cook duties under this chef was very organized and incredibly educational. Chef Julian would tell you do something then come and ask why are you doing that? Expecting you to have retained all the information he had presented. I stopped working here when Chef Julian and the owner had a falling out and the owner fired the whole kitchen.

At King Parrish I learned how to make Awnings of all sorts...this was a custom Awning shop with three sewing technicians a welder and a team of installers...I mainly made and fit awnings but would often help weld and go out with the installers...this afforded me the opportunity to learn all aspects of the business. At Sea Spray I learned how to make boat canvas of all sorts...working under Doug Parrish a master of his trade with 40 or more years of experience...he was a stickler for detail, quality and speed. He instilled those values in me, taking me under his wing and teaching me everything he knew. Sadly Doug became sick and closed his business and passed I feel blessed having been his last apprentice. Rock climbing instructor and guide, route setter and certification inspector. I taught Kids Climb, as a summer camp counselor for children 3 to 14 years of age. I inspected client skill for certification to lead and belay technical rock climbs. Set artifical rock climbs up to a grade level of 5.13. I also took clients (groups, families and Indeviduals)outdoor climbing on multi-pitch and top-rope technical rock climbs. I've climbed for over 20years Yosemite to Matorea. I spent most of my climbing career in Indian creek though I've been to the Tetons, Fountain bleu, Moserraut, 15 seasons in Joshua Tree, 3 years climbing big walls in Yosemite, The Colorado Rockies for most of my life, Whitney Portal, 4 years in the Granite Mountain wilderness and sarounding areas of Arizona...over a hundred desert towers from Earth angel to the Titan...over a hundred days in Zion and sport crags from penitente to Verdon gourge...soloed the nose to the moon light buttress and many more...I'm a climber at heart which breeds hard work and commitment and a breadth of leadership and decision making skills.
