I am a chef in a small, hard working team who push each other to be better everyday. Our focus is fresh produce that is picked from our fields that morning. We have our own farms for meat as well. Over the past few months I have been working on our outdoor BBQ producing high quality food quickly and to an excellent standard. In line with this i have many opportunities to do our outdoor events which is regularly for 40+ people. We are on show to the public as we cook and then we speak about the produce after.

I am currently a Chef De Partie at The Three Crowns in Chagford, Dartmoor. I was working the very busy Larder section until two months ago when i was moved on to be the Breakfast Chef. We consistently do 40+ for Breakfast then i stay on the Cook Line for Lunch service when we can do 80+. My roles including, prep for the kitchen, fridge rotation and general cleanliness in this very popular Dartmoor Hotel.

Teignmouth

I am part of a team of three serving food all day. We do everything from sandwiches to steaks. I have ran services on my own quite a lot and have slowly been giving more responsibility. I am confident to do the evening orders and clean downs on my own. I have also worked the bar and waited on tables whilst being hired here.

Meribel

I was Chef d’Partie in one of the busiest restaurants in the Alps for a season. Regularly serving over 100 customers in a day. The cooking style was fine dining and I was fortunate enough to have some of my dishes put on the specials and the menu. Over the last month the kitchen was left in my control a lot more and I would do services with just a pot wash and myself.

Bromborough

I was always in charge of section in the Italian Restaurant whether it be the Grill, Pasta or Pizza. Everything was made fresh to order and we would do Christmas Functions and weddings for up to 250 people. I then progressed over to the Pub Kitchen in which I would be on my own for 10 hours a day cooking through the busiest periods of weekends in a sports bar.
