As a Quality Control Technician I was responsible for monitoring the quality of the ingredients coming into the facility, as well as the quality of the finished product we were producing. I would divide my time between being in the production area and the Lab. In the production area I performed routine auditing of finished product in which I would inspect the product packaging, labels and code dates, as well as the temperature and weight of the product to ensure it was correct and within specs. I was also responsible for checking the temperature of product coming out of the spiral freezer and record it in the HACCP log to ensure food safety.In the Lab I would perform moisture analysis on incoming flour samples, and inspect the sifter for bulk flour deliveries. I tested crust pH and moisture percentages. I collected product and environmental samples for microbial testing. I was responsible for placing any ingredient or finished product on hold that was out of spec or needed rework.I created and implemented a Hold Log database using Microsoft Access for the department. It enabled much easier tracking of items on hold. I also added programming that would actually generate and print out the hold tags with the ID number, date, product, and reason already on them so that it wouldn't need to have each one written in by hand any longer.

I was responsible for gauging the volume of business and adjusting the number of employees in order to maintain the proper labor percentage metric. I counted inventory of ingredients and assisted in preparing the weekly order. I was responsible for counting and reconciling the cash from all of the registers, and preparing the nightly deposit. I was usually the manager of the closing shift, so I would ensure the areas were properly cleaned and stocked for the morning shift and then was responsible for securing the building at night.
