Tim Baldwin is currently Vice President of Food and Beverage for Aspen Skiing Company and their 4 Ski Resorts. Prior to his current role Tim was General Manager at Residences at The Little Nell, the exclusive fractionally owned property managed by the 5 star team at The Little Nell. The Residences at The Little Nell is a blend of luxury hotel rooms and 3-4 bedroom suites along with fractionally owned private residences. Previously Tim was Director of Food and Beverage at the AAA 5 Diamond Monarch Beach Resort in Dana Point, California. At the Monarch Beach Resort Tim oversaw all aspects of the property's food and beverage program including its 9 outlets and banquet departments. Tim was Food and Beverage Director at the Little Nell in Aspen, Colorado. The Little Nell is a Forbes 5 Star AAA 5 Diamond property and the only slope side hotel in Aspen. At the Little Nell Tim oversaw the 5 outlets on property as well as the banquet and catering program. Element 47 the hotel’s flagship restaurant holds a Wine Spectator Grand Award and is a Forbes 5 Star Restaurant. Prior to joining the Little Nell, Tim spent 12 years at the five star, five diamond Broadmoor Resort in Colorado Springs. At the Broadmoor Tim was a pivotal agent in opening the Summit restaurant, named one of Frommer’s Travel Guide’s “Top 10 Hotel Restaurant in the USA.” Tim also re-opened the Penrose Room which achieved a five star, five diamond ranking. In addition to his role on the management team at the Broadmoor, Tim led the resort’s famed wine program. He was recognized as the “Best Sommelier” at the Copa Jerez, the international food and wine competition that occurs every two years in Spain.Tim has been acknowledged by Restaurant Hospitality magazine as being one the “Top 30 under 30” for restaurant professionals in the USA, as well as being featured in the magazine The Tasting Panel’s “Top golf club wine directors.” Tim grew up in Vermont and has worked for multiple restaurants throughout New England.
