Taichi Isaku is the co-founder and Chief Product Officer of CoCooking, the company helping to build a sustainable food system through its food-rescue app TABETE. He is also a board member of Slow Food Nippon, the Japanese branch of the world’s largest nonprofit food movement. In addition, he is a senior researcher at the Keio Research Institute at SFC.Taichi originally was, and continues to be, a researcher on food and creativity. He specializes in the pattern language method, an approach to knowledge utilization that fosters creativity and diversity in communities. Applying the method, he has created several tools and written a book to enhance creativity in the kitchen. Today he expands his area of inquiry to sustainable food, social movements, and ethical consumerism.In 2015, whilst finishing his masters degree, Taichi joined his undergraduate-time classmate Kazuma Kawagoe in co-founding CoCooking. To make the world more fun and creative with food, they set out to provide creative cooking experiences. Though they saw some success, they felt they were missing the sustainability half of doing business with food. This underlying frustration lead to them, along with the company's third board member Saori Shinoda, launching TABETE. TABETE is an app that reduces food waste by matching excess food at restaurants with people looking for discount and/or eco-friendly food options. As of June 2020, approximately 1200 stores and 30 thousand users have joined the fight against food waste. 43 thousand meals were rescued, which estimates to 22 tonnes of food waste and 60 tonnes of CO2 emission reduced. From his personal passion to encourage ethical consumerism, Taichi is in charge of the app's product and brand. Through his challenges, he is in search of a way to create social change while adopting the startup model.
