Focused on the high-end international market, Vie Montagne offered quality international cuisine in an exclusive interior that was nominated in the “Luxury International” category at the 2018 Restaurant Design Awards. The business was sold in 2021 and has been assimilated in to the 67 Pall Mall group.

With Commercial Pilot Training Academies and Aviation Foundation Schools in key locations across Europe, the Middle East, Asia and Australia, Airways Aviation is a world leader in Aviation Education with a focus on internationally accredited commercial pilot training. Airways Aviation is the world’s third largest aviation education business. The role focused on developing M&A transactions for the group and coordinating the expansion of a network of Aviation Foundation Schools in Europe, MENA and Asia, collaborating with local governments, UKTI and ambassadors to the different territories. As Chief Operating Officer, the role included oversight of the acquisition of the UK business and the development of the Airways Aviation Global Headquarters. Setting up a Spanish Fair Weather Base flight school in Northern Spain including successfully negotiating substantial grant funding from the local Aragon government. As Chief Commercial Officer, the role focused on developing M&A transactions for the group and coordinating the expansion of a network of Aviation Foundation Schools in Europe, MENA and Asia, collaborating with local governments, UKTI and ambassadors to the different territories.

The Ebury, a 3 Rosette gastropub, was purchased after the financial crisis, re-positioned and successfully sold.The business was purchased in 2011 for 20% of the price it had been sold for in 2007. Having implemented a successful strategy, the business was sold in 2013 for a 70% uplift from the purchase price.

Frandek was a four-site group of award winning restaurants and pubs, which helped shape the evolution of the gastro-pub sector in London.From a start up, the business was built over a 6 year period before a successful sale to The First Restaurant Group in 2007 for £3.25 million. As Managing Director and 75% equity shareholder, the role included responsibility for identifying commercial opportunities and building the business on all levels. In particular, dealing with complex operational challenges during the roll out phase such as maintaining financial efficiency, standardisation and control in a rapidly evolving business. The experience of recruiting and managing a team of 120 staff at a young age was invaluable. In 2004 during this time of expansion of the group, I was shortlisted for Tatler UK restaurateur of the year.Etridge was nominated for UK restaurateur of the year in 2004.From a start up, developed the brand over a 6 year period before selling to The First Restaurant Group in 2007 for £3.25 million. As CEO and 75% equity shareholder, Etridge was responsible for identifying the commercial opportunities and building the business. In particular, dealing with complex operational challenges during the roll out phase such as maintaining financial efficiency, standardisation and control in a rapidly growing business. Having designed and redeveloped them from shell sites, the two leases were later sold in 2004 for £1 million.
