Working within our small but AWARD WINNING team, I'm responsible for R&D, manufacture and packaging of our cider products. Excited to share CIDER with Asia, and to craft CIDER for an Asian audience.

Now working as Director and engaged in a consulting/managerial role, I worked in the Brewery as Head Brewer from 2019 to May 2024. During this time I implemented broad ranging improvements including product recipe redesign, new product development, equipment refurbishment, bottling and canning line instillation.Black Kite Brewery was inspired by the birds of prey seen soaring through Hong Kong's skies. Between mountains and high rises, these majestic creatures represent that rush of freedom we all crave during long days in the city.At Black Kite, we brew beers that reach the highs in both flavour and balance.

I experienced brewing across two sites; on a 40 HL GEA craftstar, and 10 HL Chinese made system.Regularly ran and maintained a Meheen M6 bottling line in +32c ambient, and a wild goose 250 canning line.I set up, and ran our basic brewing laboratory with yeast cell counting and viability testing (microscopy), and titratible acidity testing.Began work developing a quality and safety management system including shelf life stability taste trials, risk assessments and staff hazard induction training.

I am comfortable working to a high standard (ISO9001 for non-clinical work and ISO15189 for all clinical activities) and demonstrate flexible and wide-ranging skills: from taking an active part in the clinical diagnostic team to everyday management of a working lab. The role required an evolving working knowledge and experience of functional safety required for the maintenance, and safe working, of a high containment facility.Responsibilities:‡ Laboratory testing: handling, propagation, testing and data analysis of diagnostic samples and hazard group 3 and 4 pathogens. Including: MSCIII sample manipulation, manual and robotic NA extraction, gel analysis and RT PCR, ELISA.‡ Technical Management of suite of laboratories including facility and equipment monitoring and maintenance; Documentation writing and editing; Purchasing and sourcing of laboratory equipment and stock. Worked as part of the team creating the National Anonymous Tissue Archive; which was set up to create and test an archive of tonsil tissue for use in studies of the sub-clinical prevalence of detectable variant Creutzfeldt-Jakob Disease or abnormal prion protein in the UK population.• Sample testing by Enzyme-linked Immuno Assays.• Selective testing by Western Blotting.• Restriction Fragment Length Polymorphism-PCR genotyping of select isolates• SOP and laboratory protocol writing.• Supervision and training of junior or new staff on the methods and practices of the laboratory.

At Alaska I was a member of a team undertaking research and development of a rapid diagnostic technique for the detection of common food pathogens such as Salmonella, E. coli, and Listeria. I ran the ISO culture confirmation assay for the detection of Salmonella as a comparison study for FastrAK R&D rapid diagnostic method trials.

Requiring the testing of client food stuffs to monitor levels of Company manufactured antimicrobial products using Plate Diffusion Bioassays and HPLC, analysis as well as investigative microbial study of food samples.
