I have developed the food direction at Intersect by Lexus to stand out from the other offerings in DIFC.My part was building the back of house team, sourcing all the suppliers of produce and equipment.I was able to source and design the bespoke crockery to enhance the feel of the concept.The biggest challenge has been to build the kitchen with the supplied power of only 36kW and still being able to deliver the high level of food. I have achieved this by utilizing modern technology with minimum consumption yet consistent delivery.
