Brief Biography Based in Macau SAR, Tom oversees Sands China Limited’s Food and Beverage Portfolio and operations as Senior Vice President of Food and Beverage - Sands China Ltd (SCL).Prior to joining SCL, Tom held the position of CEO for Eclipse Hospitality Group in Hong Kong. Also in HK, he assumed the dual role with Peninsula Hotels as Director – Group Food and Beverage and Merchandise Operations. In this role, Tom is responsible for operational development and enhancement of The Peninsula Hotels’ Food and Beverage operations while also overseeing the operation and expansion of Peninsula Merchandising.Based in Macau for five years, Tom assumed the position of Vice President - Food & Beverage for Wynn Resorts in April 2007. In addition to the responsibility of overseeing all aspects of Wynn’s food and beverage operations, he also spearheaded conceptual development and openings of new outlets. His earlier career included working in capacities such as Assistant Food and Beverage Manager at The Peninsula Hong Kong, a role he held from March 2006 until April 2007. His experience also includes managing The Mandarin Grill at The Mandarin Oriental Hong Kong from October 1999 until November 2000, managing JJ’s at The Grand Hyatt Hong Kong, managing the opening of a Hyatt food and beverage operation in South Korea, and serving as General Manager of Jean Georges in Shanghai, China, which he opened with world-renowned chef Jean Georges Vongerichten in 2004.
