Tom Swafford received his master’s in counseling from Pacifica Graduate Institute, a university that focuses on counseling with depth psychology. Focus was to reduce and control both labor and product costs. Lowered labor by 26%, inventory levels by 22%, and total costs by 21%. Increased guest count by 31%. Staff training and development was a large part of my focus here. GM / HR Manager 50 Plates 2008-2009An American Bistro. Staff of 50. Hired during initial concept development to head the restaurant and HR operations. Strategic planning, vendor selection, construction coordination, creation of policies and procedures, job descriptions, evaluations and negotiating between the principal owners when disputes arose. Created initial budgets and sales projections and processes for inventories. Authored and delivered a successful training program for the front of house staff. Responsibilities included budgeting, forecasting and providing weekly reports. Created the positions of, as well as trained and managed, five operational department heads including Public Foods Manager, Catering Sales Manager, Executive Chef, Beverage Manager and Office Manager in addition to sales staff and supervisors. Total staff of 120. Coordinated Marketing and Public Relations efforts with PCPA management raising Catering revenue by 25%. Periodically during my tenure with Aramark I was an On-Site Manager at the Las Vegas Convention Center working with their management team to ensure success at their special “Mega Events”, managing, coordinating and executing trade show events and full service dinners for up to 14,000 people in a 2 million square foot facility. These events regularly resulted in sales of $1.5 million over a three day event.

Kroger chose to no longer fund the event when they acquired Fred Meyer.
