Tracy Griffith BiographyAs the first female graduate of the California Sushi Academy, Tracy Griffith sparked national media attention as one of the world’s first certified female sushi chefs. Hired at Tsunami’s, the trendy Beverly Hills restaurant. “People would constantly ask me to make them sushi without raw fish. After initial confusion at this request, I began creating sushi rolls filled with familiar ingredients like grilled steak, cheese, tomatoes, bacon and fried chicken.” People lined up for it.The popularity of her sushi creations lead to her first cookbook, Sushi American Style, published by Clarkson-Potter, August 2004.She then went on to be partner and sushi chef at Rika’s Restaurant on the Sunset Strip that featured an extensive menu devoted to her Sushi American Style creationsTracy created the Susi American Style menu for Dean & Deluca for their new sushi to-go program nationwide.In 2009, she became the Corporate Executive Chef for an innovative seaweed and tortilla replacement food wrap company called New Gem Foods.The American Academy of Chefs (AAC), the honor society of the American Culinary Federation (ACF), inducted Tracy into the AAC and the ACF as an Honorary Fellow in July 2007. Griffith was one of only six individuals inducted in 2007. Tracy has been featured on DIY (Do It Yourself Network) as the chef host and host of Celebrity Hobbies. She can be seen monthly on the Home Shopping Network demonstrating the delicious “Gem Wraps” for New Gem Foods.She is also a singer/songwriter with her first country music CD entitled “Red” released in August 2006.
