Led operations at Province Brands, a sustainable technology start-up developing a novel process to utilize waste plant biomass rich in cellulose as a feedstock to produce food-grade sugars. Driving progress and aligning goals between the leadership team, the in-house lab team completing proprietary sugar process research (enzymatic hydrolysis), and third-party partners required for ongoing operations of Canada’s first infused apple cider beverage portfolio (Yandi Fresh). Managed all Yandi Fresh beverage portfolio logistics and third-party partners including production scheduling, inventory management, contract negotiations, purchase order fulfillment, sales & marketing initiatives, and product line expansion generating over $400,000 in revenues across four provinces in 2023.

Led the procurement of a glycol chiller, dust collector, and filter press for the commercial scale facility including equipment sizing, P&ID creation (AutoCAD), RFQs, purchase recommendations, and management of third-party shipping and rigging partners leading to the purchase and delivery of the equipment. Installed and commissioned a pilot scale R&D sugar production system and executed experiments resulting in a successful proof of concept, a 67% increase in process sugar yield compared to lab scale, and reduction in acetic acid levels in the final product to below the desired threshold. Led R&D initiatives and protocol development including test methods, process validation, and recipe development for modification of the traditional brewing procedure to utilize a proprietary sugar adjunct, successfully pioneering the world's first beer brewed solely from waste cellulosic biomass.

Sole manager and operator of the in-house brewery producing 2,000+ litres of beer a week, accounting for 33% of the multi-million-dollar restaurant’s total revenue. Responsible for all brewery activities including third-party vendor management, process optimization, inventory management, raw material forecasting and purchasing, equipment maintenance and repairs, product quality control, recipe development, wastewater treatment, reporting, staff management, and cost reduction resulting in no stockouts on product and product quality continuously meeting required specifications.

Operated the commercial and pilot brewing systems producing a wide variety of experimental craft beers while executing additional responsibilities including equipment maintenance and repair, inventory management, packaging, deliveries, front-of-house sales, taproom management, and brewery tours.

Operated and maintained a high-pressure experimental membrane apparatus to conduct research for Alberta oil sands SAGD wastewater purification successfully collecting and analyzing data that guided future R&D goals.

Operated a bench-scale yeast fermenter running four 16-hour yeast propagations per week to validate the growth ability of newly synthesized genetic yeast variants to add to Lallemand’s product portfolio successfully validating the efficacy of two experimental strains facilitating further testing and development.

Supported the cogeneration technology research team conducting tests on the in-house cogeneration system. Completed trials on novel radiation barriers and shelters for the Canadian Military for use in sub-zero climates.

Operated machining equipment including CNC machines producing parts for the automotive industry and the Canadian Military. Conducted quality control measures at each step in the transformation of raw materials into products.
