Nutrition Assessment and Counseling: Review body composition and resting metabolic rate using Bod Pod technology. Order and review nutrition related labs that reflect metabolic health status. Implement motivational interviewing and evidenced based nutrition education to enhance client’s adherence and success in making weight for Army body composition standards while achieving performance standards in field operations. Nutrition counseling and education topics include but are not limited to adapting nutrition to meet metabolic demands of performances and field operations, evidence-based methods for using nutrition to meet Army body composition standards, adequate hydration in the field, and safe supplementation. Provide medical nutrition therapy as needed to active duty and retire service members, their spouses and dependents. Interdisciplinary Care: Provide referrals to ancillary providers to optimize soldier performance and health. Referrals are written to wellness center for assessing body composition and behavioral health specialist to support those with disordered eating behaviors or eating disorders. Continuing Education: Continually review evidence-based research to ensure optimal standards for soldier fueling strategies and weight making practices. Participate in continuing education seminars and conferences that support the development of soldier training and performance. Community Nutrition: Coordinate community outreach events that enhance the health and wellness of the soldiers, medical staff at BJACH, and their families. Provide inpatient nutrition services among an interdisciplinary team to pediatric, surgical, and labor and delivery patients.Documentation of Care: Document encounters in medical charts using eNCPT. Maintain database for professional records of number of soldiers who receive performance and weight management care.

Under the supervision of Registered Dietitians, review patient medical condition and perform nutrition screen . Refer patients who are at nutritional risk to the Registered Dietitians for further assessment or create plans of progress for those who are not at risk. Encourage patients to improve nutrition to aid in the recovery of illness, injury, and disease. Give individualized education consults to patients on the nutrition therapy associated with their specific disease or illness. Educate catering associates on the various diets prescribed to patients including those foods that are restricted, modified, and recommended for improved nutritional status.

Prepared single portion and quantity sized recipes for clinical studies that evaluated the effect of a ketogenic diet, the standard American diet and intermittent eating. Developed nutritious recipes to be published in monthly community magazines.

Manage multiple fueling station provided for refueling LSU’s student athletes in between times of performance and studying. Educate athletes on mindful eating to prepare or recover from performance. Extensive training in food safety including temperature control, sanitization, and safe food handling practices.
