About Vin M
I am a married Christian father of two young daughters. I hold to biblically conservative values. See my blog at www.4Given.meLife can be beautiful—but it is designed to be done in right relationship with God and active involvement within our communities. Rewards in life are the direct result of calluses on our hands due to hard work and calluses on our knees due to an active prayer life. Not all rewards can be appreciated until His Kingdom comes—meaning, only after our Lord's will has been done. More reason for me to disciple and pray and listen and counsel with my heart remaining focused on the things of the Spirit. Being in-step with the will of God helps me to defeat worldly distractions while helping others to claim victory over temptation.Today, I volunteer for various church ministries that include the roles of Chaplain, Celebrate Recovery Instructor/Leader, Outreach Chef, Mentor at a Christ-centered halfway house, food pantry assistant, mission outreach, and youth ministry leader. I was trained at Arizona Culinary Institute in Scottsdale and in January 2024, I completed my Master of Arts in Ministry degree at Phoenix Seminary with an emphasis in Counseling and Family. The beauty in life mentioned earlier cannot be fully experienced until we can come alongside one another and bear one another's burdens. Work is important, but life is not all about the work. It's about the relationships we create along the way. It is not good for man to be alone. By fostering loving relationships with one another—meaning, selfless service to others for their benefit—then the love God has for the world begins to reflect outwards and people will stop and ask questions and our relationship with God will grow. People will always remember who showed up and who didn't show up to their celebrations and to their life struggles. This is the ministry of presence—and sometimes that just means making myself available and listening to what others have to share.
Listed skills include Leadership, Commercial Kitchen Design, Team Building, Customer Relations, and 46 others.

Line Cook
1. Work fast. 2. Work clean. 3. No plate leaves my station unless I am willing serve it to my own family. 4. Yes, Chef!Do all this, all the time, with spectacular plating of food prepared utilizing traditional French techniques with a combination of artisanal and contemporary methods of cooking using locally sourced food when available.
Lead Line Cook & Garde Manger
Experience in luxury dining restaurant under the direction of Chef Joseph, serving contemporary artisanal French cuisine, locally sourced, with a seasonal approach. Sauces and recipe creation. Assisted in banquet and special event organization. Fish and meat fabrication. Cold line, mainly for salads and desserts. Hot line back-up. Maintain clean work environment. Hired on to assist GM in desperate need of kitchen staff, with the mandate that I create great tasting food with fast ticket times that were plated beautifully. My short-term contract has expired after having successfully accomplished these tasks and I maintain rehire status. My management staff housing was also left in great condition with a fully refunded incidental-deposit.
Banquet Chef/Line Cook
I worked the Winter season on the ranch gaining experience in gourmet, banquet-style preparation. Banquet positions rotated daily, ranging from lead cook for dinner roll-out to garde manger in this unique hybrid method of banquet style cooking with a la cart “fire” call-out style to maintain freshness without sternos during service. Learned the “ins and outs” of executing daily HAACP log books, entering time as control as well as temperature as control. Organized, labeled, and cleaned walk-in daily to ensure correct labeling, dating, and cleanliness of entire walk-in each and every night. Created and executed menu for staff (family) meal. Successfully completed the Winter season and returned home to Arizona.
Hot Line/Cook Ii (Floater) And Garde Manger At Top Of The Rock Restaurant
Experience in highly rated, casual fine dining restaurant under the direction of Executive Chef Gregory J. Wiener, serving contemporary Southwest cuisine, locally sourced, with a seasonal approach. I enjoyed the challenge of working in this high volume, exhibition kitchen producing spectacularly plated dishes with a constantly changing menu. Each cook in this kitchen is skilled with artisan methods, combining classical French techniques with the tenants of contemporary cuisine, accentuating the flavor and integrity of each ingredient. I worked the hot line and also as Garde Manger prepping, producing, and presenting high-quality, á la carte plates for 80-150 covers per night on average. Among the culinary skills I honed in this kitchen were seasoning, grilling, poaching, simmering, searing, roasting, frying, drying, smoking, marinating, pureeing, carving, tossing, plating, knife skills, and others. Ultimately, the most important skills I have taken with me are: 1. Work fast. 2. Work clean. 3. No plate leaves my station unless I am willing serve it to my own family. 4. Yes, Chef!
