    I assisted Nathan Myhrvold in the founding of Modernist Cuisine and The Cooking Lab, publisher of four books, collectively named by Forbes magazine as "the world's most influential--and profitable" work on food to appear for a decade: Modernist Cuisine: The Art and Science of Cooking (2011), Modernist Cuisine at Home (2012), The Photography of Modernist Cuisine (2013), and Modernist Bread (2017). With our partners at Inkling, I also led the editorial team in creating the interactive digital edition and app version of Modernist Cuisine at Home (2013), a groundbreaking advance in digital cookbooks. With more than 300,000 books now in print, our titles have been translated into eight languages.As editor in chief, I recruited, trained, and supervised the team of more than four dozen writers, editors, illustrators, designers, peer reviewers, and production staff that worked on Modernist Cuisine, a six-volume, 2,500-page work, as well as its sequels. I managed the editorial, research, production, and business development operations and also oversaw the legal, publicity, marketing, and licensing aspects of this small independent publishing and consulting company. I negotiated seven-figure licensing deals and helped prepare contracts for more than a dozen translated editions of our works.Modernist Cuisine was recognized as "the best cookbook of the 21st century" by the Gourmand World Cookbook Awards and received top honors from the Intl. Assoc. of Culinary Professionals. It won Cookbook of the Year at the 2012 James Beard Awards.Modernist Cuisine at Home won best cookbook in the 2013 IACP awards for the technical/reference category and was a finalist for the 2013 James Beard Cookbook Award. Modernist Bread won best professional cookbook in the 2018 James Beard Book Awards.
