• More than 10 years of research and development experience in grain science (M.Sc. & Ph.D.), cereal chemistry, and food science (post-doctoral) • Three years’ experience in structural features and protein size profiles of gluten using ART-FTIR, SE-HPLC, RP-HPLC, thiolomic patterns, SDS-PAGE etc. • Experienced in benchmarking diversity in Ontario hard and soft wheat (more than 50 lines/varieties) with different end-use.• Comprehensive knowledge and experience in experimental flour milling, dough rheology testing, bake testing and sensory characterization of wheat, flour and final products. • Acquired process mapping skills collaborating with various processing plants or organization such as Mondelez Canada Inc., P & H Milling Group, Ontario Cereal Industry Research Council (OCIRC), and Griffith Laboratories.• Competent in hands-on chemical analysis of lipids, gluten proteins and ash, flour functionality (SRC, Farinograph, Glutopeak test, flour viscosity and oxidative gelation, Amylograph by MVAG, dough rheology etc.) and quality assessment (baking test) of cereal products.• A trained panelist on the evaluation of the sensory quality of cereals and other food products. • Highly experienced in experimental design, SOP establishment, data collection and statistical analysis for research projects.• Excellent skills in laboratory organization and management, report writing and oral presentation.• Proficient in using various types of computer software (Word, Excel, PowerPoint & Outlook), statistical software (SAS 9 & SPSS 23), graphing software (OriginLab 9), etc.
