Dr. Glen Kowach's lab studies a wide range of chemistry, from inorganic to cosmetic chemistry. My research project focused on chemistry's (particularly physical chemistry's) application to the mechanics and production of food and beverage products. Topics explored include nucleation of carbon dioxide in sparkling wines, coagulation of proteins in tofu, and the role of transglutaminase in the food industry.• Investigated gaseous nucleation in liquids and coagulation of proteins in colloids to further understand the makeup of these compounds for future research. • Attained edible tofu samples in a physical chemistry lab by utilizing transglutaminase.
