I have been with Ennismore for over a year, working in various roles on a freelance basis. Starting with the re-launch of the Hoxton Hotel Shoreditch and it's rooftop restaurant Llama Inn at the end of 2023. I then moved on to the opening of the Hoxton Hotel in Vienna as interim F&B Director for the first quarter of 2024, with responsibility for staffing, equipping, training and launching three separate bar concepts and a Modern French restaurant. The remainder of this year has been occupied with co-ordinating the re-launch of Lotti's restaurant in the Hoxton Herengracht in Amsterdam and the soon to be opened Hoxton Florence.

My responsibilities include coordinating the design, production and delivery of collateral for a number of different sites under the Birley Clubs umbrella. From invitations and menus in all shapes and sizes, to bespoke presentation boxes for retail.

Crucible is a creative consultancy for the drinks industry, delivering cutting edge solutions and programming for the hospitality industry. Our work included writing and delivering training content for major brands as well as planning and producing events, education sessions, talks and demonstrations at events such as Berlin Bar Convent, Diageo World Class and London Cocktail Week. We also developed award-winning NPD for both major brands and startups.

A popular taqueria and sports bar in East London. The food menu was developed alongside Nuno Mendes of Lisboeta and Chiltern Firehouse. The brand included an events business working with brands including Nike, Starter and Boiler Room as well as outside catering events for The Infatuation London, Adidas and Sony Music. Nominated for two Time Out Bar Awards in 2017; “Best New Bar” and “Most Imaginative Drinks List”.

Opening and managing a busy hotel bar which doubled as the bar for the attached Jean Georges Vongerichten restaurant, Matador. A lobby bar, service bar and terrace also fell under my remit.
