At Courtyard Exeter Sandy Park and The View Restaurant, I am an integral member of management within the F&B team. My role has included:- Reworking the drinks menu pricing to ensure gross margin targets are being achieved.- Ensuring the bar is set-up appropriately and closed thoroughly on every shift.- The controlling of staffing on a day-to-day basis, including role assignment to guarantee an efficient service.- Staff training and progression on the bar, including cocktail training and confidence for all bar team.- Cellar management with correct stock rotation (FIFO), creating PAR levels and maintaining correct cash flow with stock-taking and ordering procedures.- The creation of The View Restaurant cocktail menu and comprehensive spec sheets, utilising locally produced and sourced spirits.- Problem solving within the workplace and guest complaint resolve.
