I took over the culinary operations at this respected Nashville catering company, in business for 41 years and known for weddings, corporate and large event capabilities. Covid-19 decimated the business and I left in November to pursue new opportunities.

For this role I relocated to upstate New York to manage operations at the college of over 2000 students. In the time that I was there I relocated and retooled the catering operation, supported two dining halls and opened the new restaurant at the colleges Bluestone Restaurant that included an event space with seating for up to 200.

I managed two kitchens for this well recognized Nashville nonprofit turning donated and local farm products into nutritious meals so other nonprofits could have food with their programming. I worked with farmers, chefs, vendors, and a wide variety of clients throughout Nashville to create innovative and unique opportunities to benefit marginalized and underserved populations in our city.

Having worked through many positions at this prestigious university, I began my role as Assistant Director/Executive Chef in 2007. In this position I provided direction, leadership and training to the staff of 260 responsible for food production, set fiscal and programmatic goals, and brought innovation to our concepts and service delivery strategies. I took an active role in developing staff members with direct education and professional development opportunities and coaching and ensured that we met or exceeded our financial and quality goals. I had the opportunity to take a primary role in numerous facility projects during this time including the opening of Food for Thought Café in the General Library, an extensive remodel of the Rand Hall Dining Center, the expansion of the Athletic Training Table, and the opening of Bamboo Bistro, a Southeast Asian Pho concept. In 2014 we opened the Kissam Center Emporium inside of the newly built Warren and Moore College. Then during 2016-2017 I contributed to the E. Bronson Ingram Dining project and the new, yet unnamed dormitory which contains a commissary kitchen, dining hall and c-store.
