Fermentation scientist in the Cereal and Beverage Research group in the School of Food & Nutritional Sciences, University College Cork. Research topic included investigation and practical production of low-alcohol fermented beverages from bacterial and yeast fermentation systems. In this role I performed an extensive review of both scientific and traditional literature on low-alcohol fermented beverages, along with a market report and consumer study on these types of beverages. I established methods for producing these beverages at research and pilot plant scale in the research group, and trained undergraduate and postgraduate students in this methodology.During the project, I quantified changes in various fermented beverages over time using a wide variety of techniques, including: 1. Isolation and purification of yeast and bacteria from complex starter cultures, microscopy, and growth over time by viable plate counts.2. Identification by isolates by DNA extraction, gene amplification, and identification through BLAST bioinfomatics software.3. Characterisation and quantification of sugars and acids by HPLC, proximate analysis assays, titrations, and Anton Paar densitometer.4. Investigation of varieties of substrates capable of supporting complex fermentations including sweetened tea and wort produced by Congress mash of malted cereals.5. Conducting standardised sensory analysis of produced beverages.As a regular member of the research group I performed lab maintenance including the ordering of consumable items and analytical equipment, as well as arranging repairs through liaising with various companies. Meeting were held weekly, which required regular Powerpoint presentations. I was directly responsible for two undergraduate Food Science students and one Masters Students, where I was required to oversee their research projects and assist them in thesis preparation.Participated in KombuchaKon 2015 as an invited speaker on The Science of Kombucha.

When moving to Galway for my postgraduate studies in 2011, I maintained a casual working relationship with the company whereby I would travel as their representative for Irish craft beer festivals, maintain IT support, and acting as a brewery consultant for the development of a long-term yeast strain library.When returning to Cork in 2014, I established a tour of the brewing facility and historical site, which included the training and rostering of tour guides, and representation of the service at tourism and marketing events. I also prepared various graphic and video media for the business including a virtual tour of the facility, training videos for new staff members, and promotional posters. I have also continued the IT support, social media management, and yeast library management roles that I previously established.

Research Assistant

As a part of an overarching project focused on the improvement of polymer-catalysing enzymes derived from fungal systems, my main duties centred around data acquisition and analyses. I developed a series of assay methods for the quantification of biomolecule content in the harvested enzyme cocktail samples, and to determine the range of carbohydrate- and protein-degrading enzyme activities using purified and complex substrates. On a day-to-day basis, I maintained, upscaled and harvested a variety of fungal species under specific induction conditions to produce a variety of extracellularly exported enzymes. Using my developed assay methods, I constructed databases of biomolecular composition and enzyme activities for each combination of fungal species and induction medium at multiple growth timepoints. I then analysed these data using statistical tools, and graphed them for presentation.Other duties required of me as a regular member of the research group included instructing undergraduate students, participating in regular team meetings, providing technical assistance for other researchers, and assisting in the local organisation of the Irish Fungal Society's 2014 Annual Meeting.

Upon winning a paid NUI Galway choral scholarship during my MSc, I was required to perform with a chamber choir composed of other scholarship winners, led by Mark Duley. As an active choir, we met for 2 x 3 hour rehearsals per week, and performed one Compline office per week and one Eucharist Mass per month. Additionally, our choir was recruited to perform at postgraduate graduation ceremonies in NUI Galway, and perform in the university's music festivals. Some of my favourite repertoire includes pieces composed by William Mundy, Thomas Tallis, Bach, Francis Poulenc and John Joubert.In addition to my performing role within the choir as 1st tenor, I also generated sound files (using Sibelius) for each other line to assist in learning new pieces.
