In 1996 Business partners Meredith Williams and Bill Schneider created Pepper Moon Catering to provide catering services to North Carolina's Triad - Greensboro, High Point and Winston-Salem. Since its inception Pepper Moon has grown to over 1200 consistent clients. Including clients from the High Point Furniture Market, The Wyndham Championship (the Greensboro PGA TOUR annual event) and in 2009 Appalachian State University (partnering with The Red Onion Cafe in Boone, North Carolina) to eventually become Red Moon Hospitality, and also opening The TApp Room, a student-friendly bar and grill. Red Moon Catering continues to work for ASU Athletics, ASU FoodService and to cater other events in The High Country of North Carolina.In 2017, Meredith and Bill sold Pepper Moon to local business woman Lee Staehly and her husband Joe. Pepper Moon remains the Triad's largest full-service catering company, and all but one employee have remained on board with Lee and Joe, a testament to their commitment to maintaining Pepper Moon's reputation. Currently Meredith remains on contract with Pepper Moon to assist with Spring and Fall Furniture Markets in High Point, The Wyndham Championship PGATour event, and both Greensboro and High Point's Annual Family Services Oyster Roasts.
