Duties include: hiring/terminations, in-service training of culinary and wait staff, ordering, inventory, labor and food cost controls. Successfully moved kitchen from heat and eat preparation to scratch cooking. Training staff in modern cooking methods and terminology. Direct control of a yearly budget of $600,000 which included, budgeting forecast, inventory controls.
