DRM (Dining Room Manager) - I would be assigned a section at the beginning of service (typically 10 tables which could seat approximately 35 covers. Before service, I would memorise typically 3 specials and relay the entire dishes and their condiments to the customers. I would then take their order and if they have any allergen's they let me know about, describe any changes to dishes we can make or offer an alternative dish instead. Additionally, I would constantly be checking in with the other DRM to coordinate checks going into the kitchen, as well as tables having starters cleared and calling 'Mains Away'. Furthermore, I would be in charge of a 'runner' as an extra set of hands in the dining room and delegate smaller responsibilities to them e.g., Relaying tables, checkback's, drink orders, etc. In addition, I would be in touch with the maitre d' to check how many tables I had coming in and which tables needed to be prepared for them.
