Established in 2009, Glee Hospitality Solutions today stands as the leading hospitality consultancy and operations management company across the region. General Manager  Brands include: Mediterranean Cuisine Restaurant & Café chain | Premium Lebanese Cuisine Restaurant | Traditional Lebanese Shawarma Outlets | Coffee Shop | Butcher Shop | Refined Turkish Fusion. Primarily responsible for maintaining a robust cash-flow and profitability margin of 26% and successfully over achieved targeted sales by 14%.  Instrumental in improving operational processes, systems, structure, accountability matrices and people capabilities to ensure rapid growth and enhanced customer service, quality and profitability.  Responsible for developing and retaining strategic relations with external vendors. Championing continuous improvement strategies including the development of an operations management system which provides visibility on all aspects of the business (tools include: KPIs, reporting, inventory management, controls and planning elements). Successfully implemented a new financial structure which provided more accurate and efficient forecasts and managed budgets across multi-functional departments (ideal vs. actual studies, revenue management analysis and corrective action plans). Worked in partnership with stakeholders to raise capital to support future growth strategies.  Operating as key contact for all external and internal relations including collaborating with customers, investors, franchisees and business partners. Ensured all operational processes met the long and short term visions of the business delivering continued growth and efficiencies.  Currently consulting on 2 projects focusing on building an operation, financial and franchise manual.

 Managed multi-site outlets including Food 101 | Citta Resto-Café and Ocap Resort & Restaurant.  Responsible for setting the business plan, identified key locations and led menu design processes.  Recruited management and operational staff, designed workflows and built relations with 3rd party suppliers.  Took ownership of cost and revenue reports, food menu engineering and designing, restaurant policies and procedures and the successful implementation of efficiencies – leading to enhanced performance and service excellence. Ensured targets were met in relation to sales, service, quality and cleanliness.  Monitored staff performance providing training and mentoring when required.  Took control of procurement processes to implement best practice and best price. Presented financial and operational reports to senior management teams.

 Responsible for accurate applying sales fundamentals to the market, successfully achieved set targets while managing offers and spending. Managed a team of merchandisers to ensure quality results and performance levels were maintained.  Negotiated, implemented and maintained contracts in stores and evaluated / reported progress.  Took responsibility for managing key accounts and worked on joint venture plans with clients to achieve targets.

 Progressed within the business, culminating in the role of cost controller. Ensured service excellence, compliance and that robust control was implemented to manage resources.
