Copia Vineyards and Winery

The story of Copia Vineyards begins with the passion of two people, a shared love of wine and the beauty of the land where it is grown and made. Varinder Sahi and Anita Kothari had different paths to the world of wine. He has a background in engineering and business and hers is in restaurant operations and marketing. His work took him across the globe and in his travels, his love of different cuisines and wine grew. She worked with some of the finest restaurateurs, wine directors and international chefs in Chicago and New York City, allowing her to cultivate a growing love of fine food and wine from around the world. Their shared interests and entrepreneurial spirit became the spark that brought them to Paso Robles. In 2015, Varinder and Anita participated in an in-depth educational tour of Paso. They immediately fell in love with the area and its tight-knit community of spirited winemakers. On that initial visit, Eric Jensen of Booker Vineyards made a particular impression on them. They returned in the fall of 2016, to be Booker Vineyards harvest interns. At the same time, they began to search for a site that could be a home to a vineyard that would produce boutique world-class Rhone style wine. In the fall of 2017, they found the perfect site among the scenic hills on the westside of Paso Robles and so their journey began as the new owners of Copia Vineyards in the Willow Creek District. The portfolio includes the 2016 inaugural vintage, 2017 and 2018 (currently in barrel, to be bottled May 2020). Jeb Dunnuck has reported on their 2016 vintage: “… if these first releases are any indication, the future is very bright for this team.” Copia Vineyards has 20 acres of newly planted vines (Syrah, Grenache, Mourvèdre, Cabernet Sauvignon, Petit Verdot). Until the vines reach maturity and produce premium fruit, Varinder and Anita will continue to purchase high quality fruit from their neighbors in Willow Creek, Adelaida, as well as Sta. Rita Hills and Edna Valley.
