Eating Love is a Neapolitan sourdough pizza business operating from Bangalore. It was founded in 2018 by Jaydev Vyas and Niharika Peri. Our authentic Neapolitan sourdough pizza is made from slow rising sourdough and is baked in a brick oven at 350’C . The gentle levitation and cooking process seal the flour’s natural aroma and moisture giving a soft and easily digestible crust. As a result, the edge (cornicone) is excellent and shouldn’t be discarded. Our pizzaiolos give each pizza a genuine taste of Italy. We use whole wheat flour that at the end of the long fermentation process exhausts its starch content, transforming it into ‘’noble sugars’’. This is the foundation for a highly digestible pizza. The result is a digestible product where the enzymes have done most of the hard work for your stomach breaking down starch and gluten. This makes a bread where one can really taste the flavors hidden in the flour; a pizza base that could easily be enjoyed without condiments. Most intolerance are not to wheat but to bad flour with plenty of ‘’improvers’’ and not enough fermentation. Most of our cheeses used on our specials come from the small producers and is produced daily. With these full flavors, we only need a little cheese on the pizza, leaving the task of memorable taste to the natural intermingling between the long, naturally fermented dough and the milk worked by the lactobacilli.
