We are the recently established section of Food Analytics and Biotechnology in the Department of Food Science at the University of Copenhagen. We kicked off in September 2021 as the unification of two research
groups: Foodomics and Plant-based foods & Biochemistry, with the vision to develop food science research with high impact.
We are an energetic team of researchers with varying backgrounds, and with a common aspiration to develop basic scientific and applied knowledge to promote sustainable, high-quality, and healthy foods.
Our key competencies:
Creating new insight into plant food quality and functionality.
Interaction between food and human health including digestibility.
Development, digitalization, and optimization of bioprocesses and food technology.
Improving circular economy by utilizing side streams and exploring novel food ingredients.
Contributing to molecular profiling of food through untargeted analytical platforms.
Our approaches are protein biochemistry and proteomics; foodomics and metabolomics of biological samples, including digestibility and health effects of foods, enzymes for food applications, and food structuring. We are
also engaged in process optimization by using sensors, process analytical technology, and machine learning. We work in interdisciplinary environments and in close collaboration with our industrial partners.
