Iberian Pastures

In 2015, Will Harris partnered with Jaime & Kurt Oriol to be among the first to welcome Iberian Hogs, a Spanish national treasure, to the United States. White Oak Pastures legacy farm together with the Oriol Family tradition formed the American company Iberian Pastures. The Iberian Hogs are nothing like what you have tasted in the past. This breed is unique in its genetic ability to produce oleic acid-rich, exceptionally marbled meat. Much of the fat is oleic acid, a monounsaturated omega-9 fatty acid that has been shown to lower LDL cholesterol (often called the “bad” cholesterol) and raises HDL cholesterol (often called “good” cholesterol). Only extra virgin olive oil has a higher oleic acid content. Jamón ibérico, the highest quality cured ham in the world, is characterized by its long aging period (24-48 months), rich red color, ample marbling, and complex, sweet, nutty flavor. Our first generation of Iberian pigs born on American soil have roamed White Oak Pastures and began selling pork since early February 2017.
