We just choice through a genetical selection, the animals which have the most proper characteristics of weight and age to be offered to our clients. The animal´s feeding is completely natural and it is the basis of our product. It is based on natural feed (cereals from Castilla y Leon). This important detail linked to the higher weight and age in the moment of slaughtering, provide our products with an outstanding and distinguished quality. We pride ourselves on being the national maximum exponent of the recovering of the Chamuscado technique as traditional slaughtering process. This process consists in removing the animal´s hair from his skin and it is done by an artisan manner using fire. In this way, we step away from the blanching industrial process The ´´Chamuscado process´´ provides our goods a lower meat alteration, allowing us to produce our products with a lower level of salt.
