At Astrea Caviar, we believe less is more. Our caviar is crafted in small batches and we offer only a few select grades. We are committed to sustainability, and we work directly with the farm to breed and source only the finest quality caviar. Our eggs are extracted from sturgeons, 10 to 25 years of age, who thrive in a controlled environment ofpure spring water and clean air. They are fed an unprocessed diet and never exposed to antibiotics or pollutants.Our mature sturgeons go through two full egg cycles before extraction at the third cycle, thereby resulting inlarger eggs and a unique, complex flavor profile. After extraction, our eggs are aged 1-2 months and cured using proprietary techniques. The final product is caviar of the finest quality, layered with rich flavor and depth.
