What does a good gastropub make? First you need a good “public house”, a place where “the public” likes to come for a good drink and good company. The atmosphere should be laid-back and casual, with music and noise and chatter all around. You might find emphasis on a wide range of handcrafted beer from small and local breweries. Then you add a superb kitchen turning out the most unexpectedly high quality food. Unexpected for the setting, but totally what the increasingly mature palates of the public demands. The food might be creative high end “pub grub” – greasy, tasty and fun sharing. Or – it might be fine dining quality that you might expect to find in a more formal restaurant. Either way: the food is usually local, very likely seasonal, and the menu is constantly evolving. The result is a “gastropub” – a place where gastronomy meets bar for a tasty and affordable experience to be enjoyed by foodies and gastro novices alike.
