Chef David Kinch, Chef/Owner of Manresa, The Bywater, and Manresa Bread readies for the winter debut of his latest concept, Mentone, a casual restaurant in Aptos, CA, just south of Santa Cruz. Mentone is the Italian name for Menton, France, a coastal Riviera town previously part of Italy. Following suit, Kinch weaves together inspiration from the region while situating the menu and perspective firmly within the Central California coast. Offerings likely to appear on the final menu include pizza made with house-milled flour; focaccia for the table; farinata; and pastas like Mandelli di Seta tossed with a mortar and pestle pesto or Central Coast Pansotti made with nettles, dandelion, chard, spinach, and borage and bathed in a walnut, pine nut, and marjoram white pesto.
