Safe food is a legitimate issue for all of us consumers and a strategic issue for all food manufacturers. I have worked in companies for food quality and food safety for over 30 years. And I want to share this experience with you as an independent expert. New analysis techniques such as those derived from WGS (Whole Genome Sequencing) for gene sequencing are already making it possible to very finely identify the pathogenic germs responsible for collective food poisoning and to trace them back to the foods in question.
