My story with Gluten began in 2009, or should I say resurfaced, I experienced Acid Reflux, Severe Digestive Issues, Severe Flatulence, and was tired all the time. I went to the doctor and was told to stop eating fruits and vegetables, dairy, etc, it had gotten so bad for me that I had stopped eating anything since everything made me feel awful, even water.
I went to Texas for a training and met a lady who stated that she was Gluten-free, I had never heard of the term before but when she described her symptoms, she described me.
I returned home and began throwing out anything that resembled Gluten, it hides in so many different ingredients and goes by so many different names, luckily those of us allergic to gluten are removing it from foods and still allowing our items to taste wonderful.
I began baking in 2010, and formulating the Cookie Bars, I began at Farmers Markets, and am now in several Whole Foods Markets and growing
