Our mission is sustainable food product development, developing food products that are healthy for both humans and the earth. Current areas of focus include: Empowering local foods: we collaborate with MSU Culinary Services and Montana food enterprise to improve the quality and competitiveness of local food products served on campus. Discovering specialty crops: we work with MSU Pulse Breeding Program and Western Agricultural Research Center to investigate the nutrition, value-added, and sustainability-marketing potentials of pulses and new Montana fruits. Sustaining Indigenous foods: we partner with Bountifield International, Senegal smallholder women farmers, and the Confederated Salish and Kootenai Tribes to innovate Indigenous food products that support the Native lands and Native communities
