Nixtamaíz is a traditional Mexican molino & tortillería, dedicated to the craftsmanship of making fresh corn tortillas. We use the ancient cooking method of nixtamalization which was invented in Mesoamerica thousands of years ago by the early Mayas and Aztecs. Our products are made from Mexican heirloom corn, that is exclusively sourced from small farming communities in rural Mexico.
Our aim is to share the rich cultural and gastronomic traditions of the native people of Mexico, while providing a high quality food product that is both nutritious and delicious. By exclusively using Mexican heirloom corn varieties we stimulate biodiversity and support small scale farmers in Mexico.
