Pugliarella

The family agricultural company, founded in 1985 by Michele Ciavarella, is now taking a step forward: the production of artisanal pasta and extra virgin olive oil, using raw materials grown on our land in San Severo, Apulia. For our pasta, we adopt traditional methods such as bronze die extrusion and slow drying at low temperatures, which give it a bold flavor and excellent cooking performance. Our olive oil, on the other hand, is made exclusively from Peranzana olives, a typical local variety, cold-pressed just a few hours after harvest: an elegant monocultivar with a medium fruitiness and a harmonious taste. We carefully follow every stage of the production process: from working the land, to caring for the crops, all the way to transformation. Pugliarella is the result of a perfect balance between tradition and innovation: we remain faithful to ancient production techniques, while also committed to efficiency and sustainability.
