ResursRestaurangen

Resursrestaurangen (RR) is a non-profit organisation based in Gothenburg who aims to reduce food waste by raising awareness around it. We work with food waste-partners (producers, wholesalers, supermarkets, etc.) to collect (perfectly consumable) food which would otherwise be thrown away. Our talented chefs and volunteers then prepare and serve the upcycled food at different events including workshops (e.g. methods to preserve food including lactic fermentation), catering, and our folkkök. We try as much as possible to minimise our own environmental impact by using CO2-neutral transportation and biodegradable materials. Not only do we work to reduce food waste through the ingredients at our events, but these events also give us the opportunity to share knowledge. More than anything, we want to create a platform for exchanging ideas and information, and educating one another on the issue of food waste. Together we can find inspiration to improve the situation- all while enjoying saved food!
