Tout a commencé à Saint-Germain des Prés… En 1932, Pierre Poilâne ouvre à Paris sa première boulangerie, rue du Cherche-Midi, au cœur de Saint-Germain des Prés. Il commence à y confectionner des miches au levain, le pain de tradition ancestrale en France. Rien n’a changé depuis. Les pains Poilâne sont toujours au levain, faits à la main, et cuits dans des fours chauffés au feu de bois. Nous n’avons de cesse, cependant, de trouver les meilleurs ingrédients et les meilleures techniques de fabrication. Prendre le meilleur du passé et le meilleur du présent, c’est ce que Lionel Poilâne - le fils de Pierre - appelait la « Retro-Innovation ». Le pain est fait de 4 ingrédients : de l’eau, de la farine, du sel et un agent levant. Notre sel de mer provient des marais salants de Guérande. Notre farine est moulue exclusivement à la meule de pierre. Nous travaillons en étroite collaboration avec nos meuniers pour utiliser les meilleures variétés de blés. Et nous prenons un morceau de pâte de la fournée précédente pour ensemencer la fournée suivante, c’est notre levain. Nous cuisons nos pains dans des fours chauffés au bois. Le feu est alimenté par des chutes de scierie et du bois de récupération. Dans un souci de qualité, la gamme des pains Poilâne est volontairement courte. Mais à chaque pain sa recette et sa spécificité.
