The Brisket è una delle prime Smokehouse italiane, che ha diffuso a Milano la cultura del BBQ Texano. Il ristorante nasce dall'idea dello chef, Lucas Duretti, argentino, il quale ha trascorso un lungo periodo in Texas per studiare e scoprire i segreti della loro tradizionale cottura 'Low&SLow'.
Il ristorante prende il nome dal piatto simbolo del BBQ Texano, il 'Brisket': la punta di petto di manzo che, avvolta da un mix di spezie ('il rub'), viene cotta a bassa temperatura per 12 ore in uno smoker americano. Ma questo non è l'unico piatto di punta del locale: si possono gustare Pulled Pork, Pork Ribs, Costate, Coleslaw, Cheesecake, Pecan Pie ed altri piatti tradizionali americani.
