The sustainable production approaches manual harvesting of overripe coffee beans, allowing the capacities and tones of the fruit to develop on the plant. Once harvested, special controlled fermentation processes accentuate the characteristics such as fragrances and flavors of the product. Once the collection process is complete, the stage of benefit starts. We carry out washing and honey processes. The final stage -but not less important- begins with the laboratory evaluation of parchment coffee to culminate with the threshing, roasting, packaging and sale stages.
