Gravid, mature Sturgeon are moved to a contained space, where they are inverted and massaged to release developed Roe. This noninvasive harvest method results in a smaller, but cleaner yield of cleaner product, prevents the harvest of premature and damaged eggs, and avoids lasting negative effects on the Sturgeon. Traditional Roe cultivation – Slaughter, C-Section, or Scoop methods – extract premature and unhealthy eggs alongside the desired mature eggs. These methods often, if not explicitly, fatally injure the sturgeon, or lead to lifelong complications from stress and scare tissue. We believe strongly in supporting this delicate environment and this vulnerable species; we chose to farm and harvest in a manner that allows us to replenish the healthy population without affecting the Sturgeon’s Native Volga.
