Our coffee is roasted just like it used to be, roasting is done with wood.
In reality SPECIALTY ITALY adopts a slow roasting (23-26 minutes) while the new roasting technologies, due to the need for volumes, are very fast at the expense of the quality of the product.
The coffee obtained has a 20% reduction in the original weight, releasing humidity and other elements. In reality, this weight loss corresponds to a quality acquisition.
