ZOTO is a privately held consultancy company on cocoa.
We are experts in post-harvest processing of cocoa and extracting the highest possible potential out of cocoa beans by steering the fermentation to obtain a desired flavor profile for the cocoa beans. We travel to the origin and help out farmers, cooperatives or chocolate makers looking for a specific flavor profile.
We facilitate direct trade by connecting the farmer with the chocolate maker. We help in thinking through business plans, infrastructure needs in order to make the smallholder think long term and become a business man.
Combining those 2 roles puts us in a unique spot in the market.
As showcases we also produce bean-to-bar chocolate from the most unique cocoas we find through our projects.
