As the first mineral water in the world to carbonate using natural CO₂ from grape fermentation, Balbin unveiled this revolutionary method at the Fine Water Summit 2024 at the Basque Culinary Center. This non-alcoholic, additive-free beverage blends pristine mineral water with aromatic esters—fruity and floral compounds naturally released during grape fermentation. Free from alcohol, sugar, and tannins, Ester Water unveils the subtle aromatic complexity of fine wine in a medium of remarkable clarity. A rare experience for the discerning palate. An evolving series of Ester Waters, The Ester Collection, is crafted with aromas recovered from select South Moravian wines. Each edition pays tribute to its vintage, varietal, and winery. It is here that legacy, innovation, and sensory elegance converge.
At the heart of Balbin is its exceptional source, naturally springing from a deep artesian well in Moravia. This underground lake, once a canyon, was formed nearly 20 million years ago and is described by hydrologists as a “sand-filled aquarium.” Rising under natural pressure and protected by ancient clay layers, the water absorbs minerals as it travels through rock, untouched by pumps, carrying a unique mineral signature.
